Chicken Fried Rice

Ingredients:

  • 4 cups cold cooked rice(Chilled)
  • 8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped
  • 2 eggs (more if desired)
  • 1-2 cups frozen veggies
  • 1 medium onion, diced
  • Seasonings (add according to taste):
  • Soy Sauce
  • Oyster sauce(If you have it)
  • Salt
  • Pepper
  • Oil for stir-frying, as needed

Heat very little oil in a medium frying pan over medium heat and make an omelet using half the beaten eggs. Turn out onto a plate to cool (do not fold omelet). Repeat process with remaining beaten eggs. Place 1 omelet on top of the other, fold and coarsely chop. Set aside.

Cook chicken pieces in light oil until fully cooked or golden brown. Drain on paper towels and set aside.

Fry the onion till soft in oil. Add the veggies till they are to your liking. Add more oil. Add all the other ingredients and you have a yummy dinner in 15 minutes!
